Blueberry Crisp, Recipe


I few years ago I had the privilege of getting to know a very talented and motivated individual through a bike ride, ALS Bike Trek MN, he put on to benefit the organization I work for. It turned out to be a very successful event that has grown year to year (even though the worst hail and rain thunderstorms!). Through one of Justin and the ALS Bike Trek MN’s friends and sponsors, Fruitshare, I was introduced to this wonderful recipe for a Blueberry Cobbler which is the best I have tasted. Its sweet, sticky, simple, easy, and comforting. Perfect for all seasons and can be made with any fruit, just substitute as you wish!

For filling:
1/2 cup sugar
4 tsp corn starch
4-5 cups of fresh organic blueberries

Combine in bowl and then transfer to 8 x 8 baking dish

For topping:
2/3 cup flour
1/2 cup oats (avoid instant)
1/2 cup brown sugar
1/2 tsp cinnamon
1/8 tsp salt
6 T unsalted butter–cut into pieces

Combine dry ingredients in a bowl. Use your hands to mix the dry ingredients with the butter–creating clumps–pinch together until most of the powder is mixed.

Sprinkle crumble over the berries and bake at 350 for approx 45 min–until the fruit is bubbling on the sides and the topping is golden brown.

Serve with a scoop of vanilla ice cream (or flavor of your choosing!).
